Founded in 2022 by longtime friends Seth Goldstein and Steven Rofrano, MASA began with a simple idea: a tortilla chip cooked in grass-fed beef tallow instead of seed oils, made with organic corn and the best ingredients they could find.
Steven cooked the first batches in his parents’ backyard. Family and friends, even those who had never thought much about ingredient labels, said the chips were better than anything on the shelf. But the tallow that made the chips great also made them nearly impossible to produce at scale. Most manufacturing plants are built for cheap oils, not tallow, and around 200 turned Seth and Steven down. So they built one themselves.
Today, MASA continues to make its chips in small batches at its own facility, even as it has grown to more than 3,000 stores nationwide. Each batch starts with organic corn, then is cooked in 100% grass-fed beef tallow for a more satisfying crunch and finished with real sea salt and spices. Some things are worth doing properly.
